We often question whether we want to consume meat and, if so, whether we want to have steak, chicken, or pork chops for dinner. But there\u2019s also the question of how the animals were raised\u00a0and<strong> how this impacts the environment and food safety<\/strong>.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">From an ethical standpoint, many people are interested in pasture-raised hogs and grass-fed beef. Animals have access to fresh air, space, and the ability to <strong>express natural behaviors<\/strong>. They graze on ryegrass and alfalfa rather than being fed corn and soybeans. These infections can\u2019t be treated with normal antibiotics, so they pose a bigger threat to infected individuals. <strong>35,000 people die<\/strong> from these infections in the US alone.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">AR is also a big burden on our healthcare system. One study estimated that the cost to treat the six common AR pathogens was more than <\/span><a href=\"https:\/\/academic.oup.com\/cid\/article\/72\/Supplement_1\/S17\/6123350\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">$4.6 billion per year<\/span><\/a><span style=\"font-weight: 400;\">. It\u2019s important to note that <strong>not all of these pathogens come from the food<\/strong> we consume. Some, like <\/span><span style=\"font-weight: 400;\">MRSA<\/span><span style=\"font-weight: 400;\">, enter our bodies when we\u2019re recovering from surgery or weakened after illness, and others, like <\/span><span style=\"font-weight: 400;\">tuberculosis<\/span><span style=\"font-weight: 400;\">, spread through the air.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The moral of the story? Confined animal feeding operations (CAFOs) crowd animals together indoors, where they are fed until they are ready for slaughter. This industrial system is often known as a <\/span><a href=\"https:\/\/modernfarmer.com\/2024\/08\/factory-farms-explained\/\"><span style=\"font-weight: 400;\">factory farm<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Since the animals are crowded together in often less than ideal conditions, <strong>disease can spread quickly<\/strong>. Farmers attempt to stay on top of this by putting small doses of antibiotics into animal feed. While many small-scale farmers give their animals <strong>antibiotics<\/strong> when infection strikes, CAFOs utilize antibiotics in a preventative way.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This widespread, non-therapeutic use of antibiotics contributes significantly to the <strong>rise of AR bacteria<\/strong>. When bacteria are constantly exposed to antibiotics, the susceptible strains die off, but the resistant ones survive and multiply. Over time, these \u201csuperbugs\u201d can become dominant in the animal\u2019s gut, on their skin, and in the surrounding environment.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">These resistant bacteria <strong>don\u2019t always stay on the farm<\/strong>. They can spread through meat during slaughter and processing, through manure applied to fields, and even through the air or water. Once they reach humans\u2014whether through food, runoff of manure, or <\/span><a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC1277892\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">infected air<\/span><\/a><span style=\"font-weight: 400;\">\u2014they can cause infections that are harder, and sometimes impossible, to treat with standard antibiotics.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Antibiotics Aren\u2019t Always a Necessity<\/span><\/h2>\n<figure id=\"attachment_167487\" aria-describedby=\"caption-attachment-167487\" style=\"width: 1280px\" class=\"wp-caption alignnone\"><img data-dominant-color=\"c8bb96\" data-has-transparency=\"false\" style=\"--dominant-color: #c8bb96;\" decoding=\"async\" class=\"wp-image-167487 size-full not-transparent\" src=\"https:\/\/modernfarmer.com\/wp-content\/uploads\/2025\/05\/Chickens-on-farm.webp\" alt=\"Close up of several beautiful white hens with bright pink and red combs walking free range in a pasture with green grass.\" width=\"1280\" height=\"720\" srcset=\"https:\/\/modernfarmer.com\/wp-content\/uploads\/2025\/05\/Chickens-on-farm.webp 1280w, https:\/\/modernfarmer.com\/wp-content\/uploads\/2025\/05\/Chickens-on-farm-560x315.webp 560w, https:\/\/modernfarmer.com\/wp-content\/uploads\/2025\/05\/Chickens-on-farm-1200x675.webp 1200w, https:\/\/modernfarmer.com\/wp-content\/uploads\/2025\/05\/Chickens-on-farm-768x432.webp 768w\" sizes=\"(max-width: 1280px) 100vw, 1280px\" \/><figcaption id=\"caption-attachment-167487\" class=\"wp-caption-text\">A little sunshine and room to move go a long way.<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">Of course, CAFOs aren\u2019t the only way to raise animals. Some farmers keep their animals on green pastures that resemble the farms that grace the labels on packages of ground beef and pork shoulders. The animals are given space to roam and are fed <strong>ryegrass<\/strong>, <strong>alfalfa<\/strong>, and <strong>other pasture species<\/strong> rather than corn and soybeans.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Some farmers who raise <\/span><a href=\"https:\/\/modernfarmer.com\/2024\/04\/people-antibiotic-free-meat\/\"><span style=\"font-weight: 400;\">antibiotic-free meat<\/span><\/a><span style=\"font-weight: 400;\"> have noticed <strong>less disease<\/strong> than when they raised animals in crowded conditions. And when the occasional animal does get sick? They administer antibiotics that are more effective than those used in conventional operations.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This lower use of antibiotics means this sustainable meat is also<strong> safer for consumers<\/strong>. One group of researchers collected samples of various types of ground beef from grocery stores and <\/span><a href=\"https:\/\/www.consumerreports.org\/cro\/food\/how-safe-is-your-ground-beef\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">tested them for bacteria<\/span><\/a><span style=\"font-weight: 400;\">. Some of these products were from cattle conventionally raised and finished on grain in feedlots, some were antibiotic-free, and others were grass-fed.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Their findings showed that the <strong>sustainably-raised meat<\/strong> (products that were labeled organic, antibiotic-free, or grass-fed) <strong>contained lower levels of bacteria<\/strong>, as well as superbugs that are resistant to at least three classes of antibiotics. The grass-fed products contained the lowest levels of these superbugs.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It\u2019s important to note that these samples show general trends, and it\u2019s possible for conventionally-raised meat to be free of AR pathogens and for these same pathogens to be present in grass-fed meat. Animals are raised in lower-stress environments with more space and less routine antibiotic use, which reduces the risk of AR bacteria entering the food supply. The decentralized, transparent supply chains also allow for better tracking, less risk of cross-contamination, and more trust between farmers and consumers.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It\u2019s important to note that no system is perfect, and food safety also depends on <strong>proper handling and processing<\/strong>.
