Worldwide, it&#8217;s a multi-billion dollar industry. The list below details some of the foods that are most frequently targeted for this kind of deception.<\/p>\n<p><i><span style=\"font-weight: 400;\">* = accepted legal substitution\/imitation<\/span><\/i><\/p>\n<h2><b>Cheese<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">There are two main types of cheese fraud\u2014cheese degraded with other ingredients not listed on the label and labeling cheese by the wrong name. Like other specialty products such as champagne, some cheeses such as Parmigiano Reggiano and Emmental are given a <\/span><a href=\"https:\/\/www.tastingtable.com\/867674\/the-clever-way-some-cheesemakers-are-fighting-cheese-fraud\/\"><span style=\"font-weight: 400;\">protected designation of origin (PDO)<\/span><\/a><span style=\"font-weight: 400;\">. A PDO means that a product is only legitimate if it comes from a certain region. Some cheesemakers are trying to fight regional misrepresentation through innovative methods, such as <\/span><a href=\"https:\/\/www.tastingtable.com\/867674\/the-clever-way-some-cheesemakers-are-fighting-cheese-fraud\/\"><span style=\"font-weight: 400;\">digital tracking<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cheese can also be adulterated with other ingredients. In 2016, the president of Castle Cheese was found guilty of selling parmesan cheese containing non-cheese elements. Bloomberg conducted an investigation into shredded parmesan sold in stores and found evidence of cellulose in several different brands. Cellulose is plant fiber, meaning it can be derived from many different sources. It <\/span><a href=\"https:\/\/www.bonappetit.com\/entertaining-style\/trends-news\/article\/parmesan-wood-pulp-cellulose\"><span style=\"font-weight: 400;\">won\u2019t really harm you<\/span><\/a><span style=\"font-weight: 400;\">, but it\u2019s not cheese.\u00a0<\/span><\/p>\n<h2><b>Fish<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Fraud is rampant in the seafood industry because of the often global nature of the market and the ease with which one species can be passed off as something else. This also makes it difficult to know where along the supply chain the mislabeling is taking place. An undergraduate class at the University of North Carolina Chapel Hill collected samples of fish sold as red snapper from grocery stores and restaurants in the counties surrounding the university and found that <\/span><a href=\"https:\/\/peerj.com\/articles\/9218\/\"><span style=\"font-weight: 400;\">90 percent<\/span><\/a><span style=\"font-weight: 400;\"> were actually not red snapper at all but often vermilion snapper or tilapia. These fish sell for a lower price point. Other examples of fish commonly mislabeled are <\/span><a href=\"https:\/\/oceana.org\/reports\/oceana-study-reveals-seafood-fraud-nationwide\/\"><span style=\"font-weight: 400;\">tuna<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/newsroom.ucla.edu\/releases\/bait-and-switch-ucla-study-finds-fish-fraud-runs-rampant\"><span style=\"font-weight: 400;\">halibut<\/span><\/a><span style=\"font-weight: 400;\"> and <\/span><a href=\"https:\/\/www.cnn.com\/2019\/03\/07\/health\/fish-mislabeling-investigation-oceana\/index.html\"><span style=\"font-weight: 400;\">sea bass<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<h2><b>Honey<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Honey is one of the most commonly adulterated foods in the world, and can be diluted with sucrose syrup of some kind (such as corn syrup or sugar beet). In 2022, the FDA conducted a test and <\/span><a href=\"https:\/\/www.fda.gov\/food\/cfsan-constituent-updates\/fda-releases-data-economic-adulteration-honey#:~:text=The%20agency%20collected%20and%20tested,product%20on%20an%20import%20alert.\"><span style=\"font-weight: 400;\">found<\/span><\/a><span style=\"font-weight: 400;\"> that 10 percent of imported honey samples were adulterated in some way. An <\/span><span style=\"font-weight: 400;\">EU <\/span><span style=\"font-weight: 400;\">investigation the same year <\/span><a href=\"https:\/\/joint-research-centre.ec.europa.eu\/jrc-news-and-updates\/food-fraud-how-genuine-your-honey-2023-03-23_en\"><span style=\"font-weight: 400;\">found<\/span><\/a><span style=\"font-weight: 400;\"> that 46 percent of the imported honey samples tested were suspicious and warranted further testing.<\/span><\/p>\n<h2><b>Imitation crab*<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">As its name suggests, imitation crab does not pretend to be authentic crab. Imitation crab is made from surimi. Surimi is a paste made of fish (often pollock) and sometimes other additives such as flavorings, egg whites and sugar. In the US, it\u2019s commonly found in the California roll, although, in Japan, it\u2019s used for a <\/span><a href=\"https:\/\/www.thedailymeal.com\/cook\/truth-about-crab-your-california-roll\/#:~:text=Imitation%20crab%20meat%20(known%20in,in%20all%20kinds%20of%20dishes.\"><span style=\"font-weight: 400;\">number of dishes<\/span><\/a><span style=\"font-weight: 400;\">. There\u2019s no reason to avoid eating surimi, unless you have an allergy to one of its ingredients. On packaging and at restaurants, it should be clear that imitation crab is not, in fact, crab.<\/span><\/p>\n<h2><b>Juice<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Popular fruit juices such as apple juice and pomegranate juice can be adulterated or diluted to cut costs. This can be done using other sweeteners, water or cheaper juices. Juice-to-juice adulteration is difficult to detect. According to <\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC9145498\/#:~:text=Generally%2C%20fruit%20juices%20are%20adulterated,higher%20economic%20benefits%20%5B6%5D.\"><span style=\"font-weight: 400;\">research published in the US National Library of Medicine<\/span><\/a><span style=\"font-weight: 400;\">, grape juice is a common adulterant because it is low in cost. <\/span><a href=\"https:\/\/www.latimes.com\/archives\/la-xpm-1989-07-27-mn-198-story.html\"><span style=\"font-weight: 400;\">A noteworthy instance<\/span><\/a><span style=\"font-weight: 400;\"> of juice adulteration was in 1989, when top officials of Bodine\u2019s Inc., in Chicago, were charged with diluting their 100-percent pure orange juice concentrate with many other substances, including beet sugar and corn sugar.<\/span><\/p>\n<h2><b>Maple syrup<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Maple syrup\u2014produced by boiling maple tree sap\u2014is a frequent target of adulteration, meaning it has been diluted or mixed with another sweetener. Sugar or corn syrups such as Log Cabin or Mrs. Butterworth\u2019s are common on the market as cheaper alternatives, and they are completely legal. But there <\/span><a href=\"https:\/\/news.uoguelph.ca\/2023\/04\/maple-syrup-fraud-undermines-the-authenticity-of-canadas-liquid-gold\/\"><span style=\"font-weight: 400;\">have been instances<\/span><\/a><span style=\"font-weight: 400;\"> of sugar syrups passed off as authentic maple syrup, driving up the price of the product. In response to this, researchers at the University of Guelph have been working on \u201c<\/span><a href=\"https:\/\/www.cbc.ca\/news\/canada\/kitchener-waterloo\/maple-syrup-fake-fraud-university-guelph-snyder-1.6810978\"><span style=\"font-weight: 400;\">fluorescent fingerprinting<\/span><\/a><span style=\"font-weight: 400;\">,\u201d which means using ultraviolet light to determine the chemical composition of syrup and detect the presence of adulterants.\u00a0<\/span><\/p>\n<h2><b>Olive oil<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Olive oil is vulnerable to both outright fraud as well as impurities. There have been multiple cases of olive oil being diluted with less expensive oils in order to cut costs. Additionally, a <\/span><a href=\"https:\/\/www.ucdavis.edu\/news\/imported-olive-oil-quality-unreliable-study-finds#:~:text=The%20report%20revealed%20that%2073,Olive%20Council%2Daccredited%20taste%20panels.\"><span style=\"font-weight: 400;\">2010 UC Davis study<\/span><\/a><span style=\"font-weight: 400;\"> found that many grocery store olive oil brands sold in the US did not meet the sensory standards to be considered \u201cextra virgin,\u201d even though they were labeled as such.<\/span><\/p>\n<h2><b>Spices<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Expensive spices are sometimes cut with additives or enhanced with dyes. Examples include the use of <\/span><a href=\"https:\/\/www.mdpi.com\/2304-8158\/12\/18\/3373\"><span style=\"font-weight: 400;\">potato starch<\/span><\/a><span style=\"font-weight: 400;\"> to bulk up spices such as turmeric, ginger or paprika. Saffron, one of the most expensive spices, can be adulterated with any number of other <\/span><a href=\"https:\/\/foodfraudadvisors.com\/saffron-fraud\/\"><span style=\"font-weight: 400;\">fibers and filaments<\/span><\/a><span style=\"font-weight: 400;\">. In one notable example, 11 individuals were arrested in Spain in 2022 for engaging in saffron fraud valued at three million euros after they were caught passing off <\/span><a href=\"https:\/\/www.newfoodmagazine.com\/news\/163664\/e3-million-saffron-fraud-scheme-uncovered-by-spanish-police\/\"><span style=\"font-weight: 400;\">pulverized gardenia as saffron<\/span><\/a><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p>\n<h2><b>Sushi wasabi*<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">True wasabi is made from grating the stem of the Wasabia Japonica plant. This fresh-grated wasabi is often different from the green paste you may find in many sushi restaurants, however. <\/span><a href=\"https:\/\/www.washingtonpost.com\/news\/wonk\/wp\/2014\/10\/15\/why-the-wasabi-sushi-restaurants-serve-is-almost-never-actual-wasabi\/\"><span style=\"font-weight: 400;\">Nearly all<\/span><\/a><span style=\"font-weight: 400;\"> of the wasabi found in stores and restaurants in the US is fake, made from horseradish and other additives, and made green with food coloring.<\/span><\/p>\n<h2><b>Vanilla*<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">When it comes to baking and sweets, vanilla is a common flavor profile. But less than one percent of the vanilla flavoring on the market actually comes from the true vanilla orchid. Instead, it is made using <\/span><a href=\"https:\/\/www.scientificamerican.com\/article\/the-problem-with-vanilla\/\"><span style=\"font-weight: 400;\">synthetic vanillin<\/span><\/a><span style=\"font-weight: 400;\">, often made from petrochemicals.<\/span> <span style=\"font-weight: 400;\">Taste-wise, many find vanillin suitable for baking purposes, and it is a more economical option than the expensive true vanilla. However, if you prefer authentic vanilla, you can always purchase the pods yourself and make vanilla extract at home.<\/span><\/p>\n<h2><b>Milk<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Typically, milk fraud occurs when milk is <\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC7561604\/\"><span style=\"font-weight: 400;\">diluted with water<\/span><\/a><span style=\"font-weight: 400;\"> for economic gain. In <\/span><a href=\"https:\/\/blog.foodfraudpreventionthinktank.com\/incident-review-and-response-buffalo-milk-diluted-by-a-tanker-with-a-double-bottom\/\"><span style=\"font-weight: 400;\">one incident in 2021<\/span><\/a><span style=\"font-weight: 400;\">, an Italian tanker truck transporting buffalo milk was found to have an additional compartment for water, for the purposes of diluting the product. Adulterants and additives in milk and milk products can also have a harmful effect on human health.
